Ujinoko

Thin mouth-feeling, short finish
Noted of dried cut grass, slightly astringent with subtle sweetness with hints of vanilla. Fruity notes of peach and apricots.
Pleasant floral flavors of osmanthus and nutty notes of cooked peanuts.
Ujinoko finishes slightly salty with marine notes of nori and kelp.

Wakamurasaki

Thin mouth-feeling with a short finish. Wakamurasaki opens with  subtle astringency, which turns into a pleasant juiciness on the tongue, followed by a smokiness comparable to Khanom Ping. Green notes of fresh-cut grass, cooked asparagus, artichokes, and edame paired with mineral notes and a lingering fruitiness of fresh raspberries make this matcha very interesting. Its nutty flavors of walnuts combined with salty sea notes of Nori finish this interesting Matcha. 

Tenarai

Thin mouth-feeling, short finish
Pleasant astringency with notes of fresh-cut grass, slightly salty, and hints of an ocean breeze, raw green asparagus, and artichokes.
Woody notes of cedar and slightly nutty with hints of cooked peanuts and walnuts.

Shigamoto

Thin mouth-feeling and a short finish, Green flavors of dried grass and hay, with fruity notes of peach and apricots. Vital mineral and chalky notes.

Ukifune

Thin to medium mouth-feeling with a short to medium finish. Ukifune opens very astringent and slightly bitter, with a lovely sweetness and juiciness on the tongue. There are green notes of fresh-cut grass and hay. The marine notes are slightly salty, with hints of nori seaweed. The matcha is fruity, with hints of lemon and raspberry. It is slightly floral, with hints of Osmanthus. Mineral notes of chalk and slightly nutty, with hints of raw hazelnuts.

YAME MATCHA

Genji

Medium mouth feeling short finish.
The Matcha is slightly astringent, which turns into a lovely juiciness.
Very nutty with hints of Macadamia,
It has a pleasant creaminess of avocados, followed but hints of buttered
Spinach and buttered peas.
Genji is slight floral with hints of osmanthus.
Notes of cacao, cacao nibs, dark chocolate, and vanilla.

Yume No Ukihashi

Thin mouth-feeling, short finish
Very light and airy, slightly astringent with pleasant juiciness.
Slightly nutty with notes of raw peanuts and chestnuts, followed by hints of cacao nibs and dark chocolate.
Yume No Ukihashi has tasty vegetal notes of buttered spinach, artichokes combined with a  slightly creaminess of ripe avocados.

Akemi

AKEMI offers a medium mouthfeel and a medium finish.

 It features creamy dairy notes alongside a toasted and roasted aroma hazelnuts, macadamia nuts, and roasted peanuts, accompanied by a slight saltiness. 

The profile is complemented by green notes of edamame, green asparagus, snow peas, and artichokes, with subtle hints of chocolate nibs adding a refined touch to its complexity.

Hatsune

Thin mouth-feeling with a short finish.
Hatsune opens very astringent and slightly bitter, with a lovely sweetness and juiciness on the tongue.
There are green notes of fresh-cut grass and green asparagus, marine notes, and a slight saltiness. There are also hints of avocado and mineral notes. The matcha is slightly floral, with hints of Osmanthus. It is nutty, with hints of raw almonds.

Wakana

Thin mouth-feeling, short finish
Slightly astringent and bitter, which leaves juiciness on the tongue.
Notes of fresh-cut grass, cooked edamame, and cooked beans give the matcha a fresh touch, followed by mineral notes.
Wakana is slightly floral with hints of osmanthus and vanilla.

NISHIO MATCHA​

Nishio 1.0

Medium mouth-feeling with a short finish. When you first taste Nishio 1.0, you’ll notice a slight astringency that quickly gives way to a delightful sweetness and juiciness on your tongue. This unique combination of flavors creates a truly memorable sensory experience. Green notes of fresh-cut grass and marine saltiness. Dairy notes of milk and cream. It is very floral with hints of Osmanthus, Rose, Vanille, and Cowslip. It is nutty with hints of raw hazelnuts.

Nishio 2.0

Medium mouth-feeling with a medium finish. When you first taste Nishio 2.0, you’ll notice a slight astringency that quickly gives way to a delightful sweetness and juiciness on your tongue, followed by a subtle smokiness similar to Khanom Ping. Nishio 3.0

Nishio 4.0

Short mouth-feeling with a short finish. Prepare for a bold journey as Nishio 4.0 unveils its character with a dominant astringency, followed by a noticeable bitterness and mineral notes of chalk. Indulge in the diverse flavors of fresh-cut- and dried grass followed by marine notes, and saltiness.

Nishio 4.0 is slightly fruity with hints of strawberries and rhubarb and finishes with hints of toasted bread.

Nishio 5.0

Short mouth-feeling with a short finish. Nishio 5.0 opens with strong astringency and bitterness which turns into a very strong sweetness on your tongue after a while. There are notes of dried grass and hay, followed by mineral notes and dry chalk. The matcha’s floral notes of osmanthus, vanilla, and cowslip give it the needed depth.

KAGOSHIMA MATCHA

Kagoshima Matcha by ma tcha maru

Kagoshima 1.0

Medium mouth-feeling with a medium finish. Kagoshima 1.0 opens slightly astringently with a pleasant juiciness on the tongue. There are notes of raw green peas, raw green asparagus, and freshly cut grass. The matcha is very floral, with hints of osmanthus, rose, jasmine, and vanilla. It is nutty, with hints of raw hazelnuts—and slightly creaminess of avocados.

Kagoshima 2.0

Thin mouth-feeling with a short finish. Kagoshima 2.0 opens slightly astringently with a pleasant juiciness on the tongue. There are notes of raw green asparagus and artichokes. The matcha is slightly floral, with hints of rose and jasmine. There are also hints of macadamia and avocados. The slightly creamy custardiness is combined with the smokiness of Khanom Ping, toasted bread, and beeswax.

Kagoshima 3.0

Thin mouth-feeling with a short finish. Kagoshima 3.0 opens bitter and astringent. Flavors of simmered green beans, peas, and barbecued saba emerge distinctly. The matcha unfolds with a gentle floral undertone, accented by whispers of jasmine and vanilla. Additionally, subtle notes of cacao nibs and mineral touches reminiscent of chalk, enriched by traces of macadamia and almonds, are present.

Kagoshima 4.0

Thin mouth-feeling with a short finish. Kagoshima 4.0 opens bitter and smokey. Flavors evoke the essence of freshly mown grass and uncooked artichokes. Subtle custard undertones blend with a gentle floral fragrance of osmanthus. Almond nuances are also present. A mild mineral quality, reminiscent of chalk, pairs with a robust smokiness akin to Khanom Ping.

Kagoshima 5.0

Thin mouth-feeling with a short finish. Kagoshima 5.0 opens slightly astringent with a lovely juiciness on the tongue. There are notes of fresh-cut grass and hay. The matcha carries a hint of saltiness and is predominantly floral, featuring notes of geranium and osmanthus, complemented by touches of vanilla and cacao nibs.

ORGANIC MATCHA

Kiwami

Thin mouth-feeling and short finish. Kiwami opens with a dominant astringency and bitterness, which turns into a sweet aftertaste. Dry, with mineral notes and strong chalkiness, followed by nutty notes of macadamia. Kiwami has a subtle saltiness, hints of an ocean breeze, and is very green with notes of dried-cut grass. This matcha also has floral notes of roses and osmanthus.

Bi

Thin mouth feeling with a short finish. Bi is very airy and slightly astringent, followed by mineral notes with a subtle chalkiness.  The Matcha is floral with a very strong osmanthus flavor and hints of vanilla. Bi has nice green notes of fresh-cut grass. It’s slightly salty with marine notes of Nori, kelp and hints of grilled Saba.

Yutaka

Thin mouth-feeling and short finish. Very astringent and bitter, with strong mineral notes. Slightly salty with hints of an ocean breeze,  beans, and dried-cut grass; overall, a fresh and vibrant green note. Vegetal notes of raw artichokes, slightly nutty with hints of raw peanuts.

Rin

Thin mouth-feeling, short finish. Rin is rather bitter with a slight saltiness and marine notes, followed by a pleasant nuttiness of raw hazelnuts and walnuts. This matcha offers green notes of raw beans and hints of edamame.

Ryo

Thin mouth-feeling and short finish. This matcha has strong green notes of cut-dried grass, hints of an ocean breeze, and subtle saltiness. Mineral notes with chalkiness, astringency, and strong bitterness…

Hayate

Thin mouth feeling and short finish. This Matcha is slightly bitter and astringent, followed by a subtle buttery creaminess. Notes of hazelnuts, slightly floral with hints of osmanthus, vanilla, and a pleasant fruitiness of raspberries. Green notes of green peas and edamame, slightly salty, followed by marine notes.

SINGEL CULTIVAR MATCHA

Samidori

Medium mouth-feeling and medium finish. Mineral notes, chalky and slightly astringency, which turns into pleasant juiciness on the tongue. This Samidori has notes of cooked artichokes, peas, and green asparagus. Followed by floral notes and hints of vanilla.The pleasant nuttiness of macadamia and cacao nibs gives this matcha a complex flavor profile, followed by a slight saltiness and marine notes of nori seaweed.

Okumidori

Thin mouth-feeling, short finish, and slightly astringent. This matcha has a chalky dryness with mineral notes followed by hints of cooked peas, asparagus, and green mango. Slightly salty with notes of nori seaweed and a pleasant nuttiness of raw peanuts and cashew nuts. The finish has a subtle smokiness which gives this matcha more character.

Yabukita

Thin mouth-feeling, short finish.

Slightly astringent and bitter with subtle juiciness on the tongue followed by mineral notes, and chalkiness. This Yabukita has strong green notes of snow peas, beans, and green asparagus.
